I’m sure you’ve noticed quite the lack of Christmas baking recipes over the last month or so. And the main reason for this (not laziness!) is the fact that baked goods quite literally make me sick. My so-called ‘morning’ sickness (its allllll day long), leaves me queasy at the thought of snacking on anything sweet, let alone baking anything.
Luckily for me, I’m living in a house with my mama, who insisted that baked goods be made in time for Christmas. So, in some cases I helped her, in a few cases, I baked on my own, but in this case, I let her do the work, and just snapped a photo to blog about.
So, while Christmas is unfortunately over, feel free to make these peanut-butter-y cookies. Enjoy one for me, will you? I can’t seem to stomach them right now!
Chocolate Peanut Chews
1 1/2 cups melted butter
2 cups white sugar
2 eggs
1 tsp vanilla
2 cups flour
3/4 cup cocoa powder
1 tsp baking soda
1 1/2 cups peanut butter chips
1 cup chopped peanuts
In a large bowl, mix together butter and sugar. Beat in eggs and vanilla. In a separate bowl, combine flour, cocoa, baking soda and salt. Gradually stir this into the butter mixture. Stir in the peanut butter chips and the peanuts. Drop by the teaspoonful onto an ungreased cookie sheet. Bake about 8-10 minutes at 350.

These cookies sound delish! Unfortunately, we don’t have PB chips here.
I’ll just have to make PB cookies with chocolate chips instead.
I too couldn’t stomach sweet things or baked goods at the beginning of my pregnancy. It eventually went away and I was able to eat basically anything I wanted. I hope that happens for you too.
